My Grandmother's Recipe: Grandmother Anne’s Honey Cake

We are in the season of honey cake, and my grandmother Anne would always honour summer solstice with the preparation of good honey cake. It was easy and yummy and ‘of the season’. She would always serve it with an extra drizzle of honey or heavy cream on top. If she didn’t have almonds on hand, she would use another nut or skip nuts all together. If she felt a hankering for a bit of chocolate, she might add some cocoa to the mix or melt a bit of chocolate and lightly fold it in last, so it created chocolate pockets within the cake itself. It’s a forgiving recipe!

Ingredients:
1 cup of sliced almonds
2 cups flour
1/2 tsp salt
1/2 tsp baking soda
3/4 cup softened butter
1 cup honey
4 eggs
1/4 cup sour cream

Oven preheated to 325 F

9” round pan

Sprinkle 3/4 cup of the almonds into the 9” pan. 

Combine flour, salt and baking soda in a medium mixing bowl.

Combine butter, honey and eggs in a large mixing bowl. Add flour mixture to it and then sour cream. Last, mix in the remaining almonds. Mix well.

Pour batter over the almonds in the prepared 9” pan.

Bake for 50-55 minutes. Cool for 15 minutes before tipping onto a plate and serving.
