My Grandmother's Recipe: Sally’s Custard Apple Pie Crumble

I see very few apple pies made like this anymore. It’s a shame because this is my favourite way by far. This comes compliments of grannie Sally.

1 - 10 inch deep dish apple pie shell (unbaked)
8 apples
2 Tbsp packed brown sugar
1 1/2 tsp cinnamon

Custard:

1 cup milk
1 cup whip cream
1/4 cup flour
3 egg yolks
1/3 cup sugar
2 tsp vanilla
2 tsp grated lemon peel

Crumble:

1/2 cup brown sugar packed
3/4 cup flour
1 tsp cinnamon
Pinch nutmeg
1/2 cup butter
1/2 cup Parmesan
1/2 cup quick cook oats

  1. Preheat oven to 425 F
  2. Bake crust 8 minutes
  3. Change heat to 350 F
  4. Peel and cut apples, toss with brown sugar and cinnamon
  5. Make custard, beating all ingredients together
  6. In another bowl combine all crumble ingredients, using your fingers to combine moisture together 
  7. Spread apples into pie shell, press down lightly
  8. Pour custard mixture over top; then sprinkle crumble mixture over top that
  9. Bake at 350 F for 45-50 minutes
